Why paper the variation at all?
Because "just sort it after" is where subbies lose money. A written variation — referenced to your original scope, priced at your rates, with a sign-off line — turns a handshake into an invoiceable document. Done before the work, it's near-bulletproof. Done after, a proper written claim with an evidence trail still wins most disputes without going anywhere near a lawyer.
